Raspberry Chia Jam

I whipped this one up quickly whilst making some yummy paleo waffles! It was quite the interesting afternoon in the kitchen trying to manoeuvre my way around a clingy dog who wants to be near the action, a 'helpful' toddler wanting to be involved all while trying to cook the waffles and make jam - thank goodness for a thermomix is all I say then! It definitely made making this quite a bit easier! 

Anyway, I decided to make this quickly as we never buy store-made jam as its loaded with sugar but I used to love jam on waffles so I wanted to relive my childhood!! :) This recipe is one I changed slightly from a Sarah Wilson recipe to suit us and also to work in the thermomix. Give it a try and swap out the sugar-loaded jam with this yummy alternative! 

Ingredients:

  • Approx 1.5 cups frozen raspberries (Sorry I didn't measure!)

  • 3tbsp chia seeds

  • 3tbsp water

  • 2.5tbsp Rice Malt Syrup.

How to:

  1. Add all ingredients to the thermomix/blender and blend it up first.

  2. If using the thermomix heat it up to 90 degrees, Speed 1 for 4 minutes. Turn down the heat to 50 degrees, speed 2 for 4 minutes to allow it to thicken up.

  3. Traditional method - Once blended, transfer to a saucepan over medium heat until it bubbles, turn down the heat and stir continuously for 3-5 minutes until it is thickened.

  4. Transfer to a glass jar and store in the fridge. Enjoy!
