Paleo Waffles
Today we decided to experiment a bit and make some Grain-Free waffles, I used to love having them as a kid but since cutting gluten, dairy, refined sugars and majority of grains out of our diet its not something we've had. This was super easy, delicious and such a success I was so happy with it, hence why I thought I should share! I found a recipe that I took some inspiration from and then changed accordingly to suit our dietary needs. I hope you guys enjoy it as much as we did today.
This mixture made about 12 waffles for us :)
Ingredients:
2 cups almond meal
1 cup tapioca starch
1tbsp + 1 tsp baking powder
2 eggs
1 cup coconut milk
2tsp apple cider vinegar
1tsp vanilla essence
2-3tbsp manuka honey
½ cup coconut oil (melted)
How to...
Preheat the waffle iron as per instructions of the machine.
In a large bowl combine/whisk together almond meal, tapioca and baking powder.
In a larger measuring cup combine coconut milk, eggs, apple cider vinegar, vanilla and honey. Add the melted coconut oil last and whisk it all well together (I whisked the eggs first and then added the other wet ingredients.)
Add the wet ingredients straight to the dry (the coconut oil will solidify when with the cold liquids so do this quite quickly). Mix well until combined, whisking ensures there are no lumps.
Add ¼ cup of the waffle mixture to the waffle iron and cook until golden brown.
Eat straight away!!! I enjoy these plain with nothing on, but I did also make up some Raspberry Chia Jam which is yummy on top, or just sprinkle some cinnamon on there!
Notes:
Store in a zip lock bag in freezer for later, to reheat either pop in the oven so they stay crispy or also turn down the heat of your waffle iron and heat in there.
